Baked Sweet Chilli Cauliflower Bites

I have been seeing lots of delicious looking cauliflower bites on the internet lately so I decided to try and make my own version and it was a success. They were really good, even my six year old ate some and he has never eaten cauliflower before.

The recipe for these vegan cauliflower bites is below if you would like to give them a try. The amounts given will serve two, so you can adjust accordingly.

You will need:

  • 1 medium cauliflower
  • salt
  • pepper
  • mixed herbs
  • garlic powder
  • ground ginger powder (optional)
  • flour (I used organic spelt)
  • sriracha sauce
  • soy sauce
  • agave nectar
  • sweet chilli sauce
  • 1 red and 1 green chilli (optional)
  • milk of choice (I used Alpro coconut milk)
  • coconut oil (optional)

– Cut the medium cauliflower in half and break into large florets.

– Pour one cup of flour into a bowl and then add 1stp of each of the seasonings: salt, pepper, garlic, mixed herbs and mix.

– Add half a cup of milk and mix. You want to have a thick batter consistency so you can add more or less milk depending on the flour you choose.

– Dip the cauliflower into the batter and then put onto a lined baking tray. Make sure all of the florets is covered.

– Bake on a medium heat for 20 minutes.

-Whilst the cauliflower bakes, in a bowl add some sweet chilli sauce, sriracha, agave nectar, bbq sauce and a dash of soy sauce. You can also add a tablespoon of coconut oil but this is optional. No measurements here as you can play about with quantities to get the consistency you would like.

– Once the cauliflower has finished baking dip it into the sauce that you have made, ensuring it’s full covered, and then bake for another 20 minutes.

Once it is cooked you can cut the red and green chillies to garnish. The baked cauliflower goes well with stir fry and rice, can be added to a noodle dish, or enjoyed on its own.
